The cuisine at TYGLE Gdańskie is the result of an uncompromising approach to ingredients and a deep respect for nature. Executive Chef Michał Stężalski, drawing from the natural bounty of Pomerania and years of experience gained in European fine-dining establishments, has created a signature culinary language—distinctive, mature, and deeply rooted in this place.
The name of our restaurant is no coincidence. For centuries, Gdańsk has been a cultural "melting pot" (tygiel)—a vibrant port city where trade routes, ideas, and spices from the furthest corners of the world intersected. Today, we continue this tradition on our plates. Global inspirations and modern culinary techniques meet the highest quality local ingredients.

At TYGLE, we believe that true flavor comes from nature. That is why our kitchen utilizes high-quality regional products from Polish farms across various corners of the country. Thanks to them, we can serve dishes full of authentic flavor that simultaneously support local producers and tradition.
By using raw materials from regional suppliers, we are able to present the beauty of Polish cuisine in a modern interpretation by Chef Michał Stężalski. The pillars of our restaurant are Polish breeders, farmers, and small entrepreneurs whose hard work gives us the opportunity to showcase authenticity, diversity, and remarkable nature-based taste.

We had a wonderful dinner at TYGLE. Despite not having a reservation, they quickly found a table for us, and the service was incredibly warm and professional. The food was outstanding — full of flavor, beautifully presented, and refined in every detail. This place makes a strong impression, and we definitely want to come back.

At TYGLE, we are presenting four photographs from the award-winning series "Seasons" by Kacper Kowalski—a pilot and photographer, and a World Press Photo laureate.
This is a unique, aerial view of the Polish landscape, captured from a paraglider. Kowalski's works reveal the cyclical nature of the environment—spring, summer, and autumn—transforming familiar forms into abstract images painted with light and time. It is a story of the relationship between man and nature, which takes on an entirely new dimension from an altitude of several thousand feet.

TYGLE & The Stars is a series of tasting dinners where Executive Chef Michał Stężalski invites exceptional personalities from the world of gastronomy—Michelin star laureates from around the globe—to cook together. It is a space where global techniques meet local craftsmanship and Pomeranian ingredients. The history of our collaborations is a chronicle of encounters between different cultures and temperaments.
The series was inaugurated in 2024 by Artur Skotarczyk from the restaurant Muga* in Poznań, creating a subtle dialogue between Pomeranian identity and Greater Poland's precision.
The following year, 2025, brought southern energy thanks to Juanlu Fernández from LÚ Cocina y Alma**, who paired Andalusian temperament with the raw character of the Baltic.
In 2026, Jonas Lagerström from Stockholm's starred restaurant Etoile* presented a manifesto of Scandinavian discipline, introducing a deep "less waste" philosophy to our kitchen.
