TYGLE Gdańskie is located on the restored Granary Island, in the very heart of historic Gdańsk, where the windows offer a unique panorama of the historic Long Bridge (Długie Pobrzeże). This exceptional view of the Motława waterfront serves as the perfect backdrop for TYGLE’S cuisine, allowing guests to fully immerse themselves in the spirit of the city.

The cuisine at TYGLE Gdańskie is the result of an uncompromising approach to ingredients and a deep respect for nature. Executive Chef Michał Stężalski, drawing from the natural bounty of Pomerania and years of experience gained in European fine-dining establishments, has created a signature culinary language—distinctive, mature, and deeply rooted in this place.

The name of our restaurant is no coincidence. For centuries, Gdańsk has been a cultural "melting pot" (tygiel)—a vibrant port city where trade routes, ideas, and spices from the furthest corners of the world intersected. Today, we continue this tradition on our plates. Global inspirations and modern culinary techniques meet the highest quality local ingredients.

However, top-tier gastronomy is never a one-man show. Behind every dish stands a carefully selected team of chefs—a collective of enthusiasts and artisans. These are people for whom the kitchen is a space for the constant search for the perfect balance of flavors and textures.

At TYGLE, we believe that true flavor comes from nature. That is why our kitchen utilizes high-quality regional products from Polish farms across various corners of the country. Thanks to them, we can serve dishes full of authentic flavor that simultaneously support local producers and tradition.

By using raw materials from regional suppliers, we are able to present the beauty of Polish cuisine in a modern interpretation by Chef Michał Stężalski. The pillars of our restaurant are Polish breeders, farmers, and small entrepreneurs whose hard work gives us the opportunity to showcase authenticity, diversity, and remarkable nature-based taste.

At TYGLE, art is not merely decoration—it is an integral part of the experience that harmonizes with our cuisine. We believe that culinary and artistic mastery grow from the same foundations: patience, passion, and uncompromising craftsmanship.

Our walls become a space for dialogue, where we present artists of exceptional sensitivity. Following the meditative drawings of Andrzej Jan Bator, we now turn our focus to aerial photography.

At TYGLE, we are presenting four photographs from the award-winning series "Seasons" by Kacper Kowalski—a pilot and photographer, and a World Press Photo laureate.

This is a unique, aerial view of the Polish landscape, captured from a paraglider. Kowalski's works reveal the cyclical nature of the environment—spring, summer, and autumn—transforming familiar forms into abstract images painted with light and time. It is a story of the relationship between man and nature, which takes on an entirely new dimension from an altitude of several thousand feet.

Just as Kacper Kowalski spends thousands of hours in the air waiting for the perfect moment and light, our chefs select local products and refine every detail on the plate with the same precision.

& The Stars.

TYGLE & The Stars is a series of tasting dinners where Executive Chef Michał Stężalski invites exceptional personalities from the world of gastronomy—Michelin star laureates from around the globe—to cook together. It is a space where global techniques meet local craftsmanship and Pomeranian ingredients. The history of our collaborations is a chronicle of encounters between different cultures and temperaments.

The series was inaugurated in 2024 by Artur Skotarczyk from the restaurant Muga* in Poznań, creating a subtle dialogue between Pomeranian identity and Greater Poland's precision.

The following year, 2025, brought southern energy thanks to Juanlu Fernández from LÚ Cocina y Alma**, who paired Andalusian temperament with the raw character of the Baltic.

In 2026, Jonas Lagerström from Stockholm's starred restaurant Etoile* presented a manifesto of Scandinavian discipline, introducing a deep "less waste" philosophy to our kitchen.
